A bowl of No-Fuss Meadow Mix stew

Ingredients:

  1. 1-2 TbSp Oil / Butter / Ghee
  2. 1 Medium/large Tomato (or ½ cup puree)
  3. Water

1. Sauté the Base

Heat your favorite oil, butter, or ghee in a deep pot. Sauté a chopped medium/large tomato until soft and mushy. Canned tomato will work too!

2. Add the Lentil Mix

Pour contents of the pack into the tomato base. Sauté on low to medium heat for 2–3 minutes to gently roast the spices and unlock their aroma. If cooking half pack, simply reduce amount of water in half.

3. Add Water & Cook

See chart below for water. Start with the lower end of the suggested water amount and add more if needed. Cover and cook (medium-high heat works well) until the lentils are soft & well-blended.

A serving of Meadow Mix chili with chicken

Ingredients:

  1. 1½ pounds ground chicken
  2. 2 tablespoons olive oil
  3. 1 large onion, diced
  4. 4 cloves garlic, minced
  5. 2 tablespoons chili powder
  6. 2 teaspoons ground cumin
  7. 2 cups Meadow Mix
  8. 1 28-oz can crushed tomatoes
  9. 6 cups chicken broth
  10. Salt, to taste

To Serve

  1. Sour cream
  2. Sliced green onions
  3. Crushed tortilla chips

1.Heat oil in a large Dutch oven over medium-high heat. Add ground chicken and onion and cook until chicken is browned and cooked through, breaking it up with a spoon.

2.Add garlic, chili powder, cumin, and Meadow Mix and cook 1 minute until fragrant. Stir in crushed tomatoes and broth.

3.Bring to a simmer, cover, and cook over low heat for 40–45 minutes, stirring occasionally, until lentils and peas are tender and chili is thick. Season to taste.

4.Serve hot with sour cream, green onions, and crushed tortilla chips.
